I just wanted to share my newest recipe experiment with you. I've been feeling my banana breads where missing something lately, so i tried a few other banana breads recipes on the internet. Although they all tasted great, i still felt they needed a kick. So here is what i did, and it was a huge success when i served it.
Use any banana bread recipe you like (even works great with a box mix). While your bread is baking take one VERY ripe large banana (when my banana's start to turn black i throw them in the freezer skin and all, than just peel while frozen or put in microwave for a minute to defrost than peel.) mash the banana in a sauce pan, add a few tablespoons of confectionery sugar (more or less depending on how sweet you want it) than add a handful of each of the following white raisins,chopped walnuts,chopped apples and coconut (you can pick just a few or use all that is mentioned depending our your likes and dislikes) heat to small boil, stirring at all times. Now you can use the mixture a few ways (i've tried all three ways and they all worked well.)
1. After bread is baked, remove from oven and cool, than add the topping to the top let set for about 30 minutes than serve.
2. Before bread is baked add topping than bake as usual (this gives more of a toasted topping.)
3. Bake bread, let cool than slice bread in half, spread topping on top of bottom layer (don't use a lot a thin layer works best) and than put top layer back on. Than coat the top with what is left.

ppp.sss While at the grocery store the other day i seen this in the produce section next to the bananas. I grabbed a box to try, hey who knows bananas better than Chiquita!!!!!
UPDATE: I baked the Chiquita Banana Bread Mix last night and it was AWESOME... So much easier than baking it from scratch and just as good. I added a extra banana, instead of two i used three.
