I'm back with my old time favorite recipe for corn bread cake.. Its SO SIMPLE, yet SO DELICIOUS.
I've experimented with many different toppings, which will change the corn bread cake, to some thing a bit different each time.
First off start with buying the following:
You can use different brand yellow moist cake mixes, but don't use a different corn bread mix.
Now just follow the mixing directions on each package.
I mix the cake mix first than i add the corn bread mix and it's ingredients and mix it all together. Spray baking pam into 9x11 baking
pan. ( I use the foil disposable ones that come with a cover)
before putting it into the oven cover the top of the batter with fresh coconut, than pat it down just a little with a rubber spatula. Bake following the temperature and time directions on the cake mix box. I like using coconut because it tends to make the cake moister. (I like checking to see if its done using the old fashion toothpick test.) Don't over bake as it will dry out.
after it's done, remove and add confectionery to the top while it is still warm. Than sprinkles or sugars.
You will love this corn bread cake, it is so moist and Delicious....
It is so easy to make and easy to transport to family and friends. It fits into so may occasions.
It is great as a breakfast treat, an after dinner dessert or serve it with dinner or on your buffet menu.
You can also add many different toppings to make it unique each time.
I tend to stay with the coconut, and add other things to it too. but you don't have to do it that way.
here is a list of just a few ideas:
1. Frost it with Nutella
2. sliced bananas
3. pineapple slices
4. walnuts
5. white raisins
6. flavored frostings
7. sliced strawberries
8. Blueberries
9. Roasted pecans tossed in brown sugar and cinnamon
I have tried all the above, with the exception of the frosting's i added the item or items to the raw batter top and lightly pushed them down just a tad bit.
